A delicious & healthy treat that is perfect as a pre-workout snack or when you need to uplift your energy levels

INGREDIENTS:

1½ cup walnuts 
1½ cup pecans 
16 MyJool Medjool dates (*see note)
¼ cup raw cacao powder 
3 Tbsp cacao nibs 
2 tsp tahini 2 tsp pure vanilla extract
2 tsp extra virgin coconut oil, melted Pinch of salt

DIRECTIONS:

Process the nuts to a coarse consistency.

Transfer to a bowl and add cacao powder, nibs and salt. Mix well.

Blend the dates and rest of ingredients until you get a smooth date caramel.

Mix with the dry ingredients until a compact dough is formed.

Line a mold, distribute the dough and press firmly.

Cover & place in the freezer for a few hours.

Unmold & cut into portions.

Decorate with avocado frosting and sea salt flakes.

NOTE: I recommend that you soak your dates in warm water for 5-10 minutes so you can easily peel them.
⏳ It lasts up to 5 days in the fridge and 2 months in the freezer.

Cacao & Avocado frosting

A versatile and very easy to make cream that can be used to decorate cakes, cupcakes, fill cookie sandwiches… Or you can just eat it with a spoon!

1 ripe avocado 
1/2 cup raw cacao powder 
3 Tbsp almond milk (preferably homemade) 
1/4 cup maple syrup 
3 Tbsp coconut sugar 
1,5 Tbsp extra virgin coconut oil, melted 
1/2 tsp pure vanilla extract 
A pinch of pink Himalayan salt

Add all the ingredients to the jar of your high-speed blender (or the bowl of a mini-size food processor).

Blend until you get a nice creamy and silky texture.

Transfer to an airtight container and store in your fridge for at least 4 hours to thicken.
